Neverwinter Nights can be a time sink especially with all the community mods it has.

I also play a few FOSS games like Summoning Wars, Kwest Kingdom and Hedgewars.

Not really Linux-only but still my top fav : Runescape. Runs anywhere anytime... Playable for free, if you enroll as member (not required to play though) there's tons of extra's to play with.

Pretty much anything made by ID Software runs on Linux, from the ancient Wolfenstein 3D to Quake 4 and anything in between.

Playing True Combat: Elite has always been a blast.
World of Goo, the popular indie title, also has a Linux version.

I like PySolFC - not exactly a gamer's game, but a very cross-platform nice suite of Solitaire games. Others of my old favourites include Frozen Bubble, Hex-a-Hop and SDL Vexed. I've recently started playing many of the online JavaScript puzzle games at http://brainbashers.com/ and elsewhere, and they work fine in Linux.

Not sure this is the kind of game you had in mind, but Nethack is great! You can even play it over SSH to your home machine ;-)
